Rocky Road Candy

1 (12 oz) package of semisweet chocolate chips
1 (14 oz) can of sweetened condensed milk
2 T. margarine
2 C. nuts
1 (10-1/2 oz) bag mini marshmallows

Place chocolate chips, sweetened condensed milk and margarine in top of a double boiler. Cook over medium heat until chocolate and margarine are melted. Stir constantly.

Remove from heat. Stir in nuts and marshmallows.

Line a cookie sheet with waxed paper. Drop spoonfuls of candy on top. Refrigerate for several hours.

Crockpot Rice Pudding

8 cups of milk (1/2 gallon)
1 cup of rice (not minute rice)
1 cup of sugar
1/4 tsp cinnamon
1 tsp vanilla
3 tsp butter

Combine everything in crockpot and cook on high for 4-5 hours. Tastes great!

Yummy Bars

1-18 oz. box German chocolate cake mix
3/4 C. melted butter
2/3 C. evaporated milk
1-16 oz. package semi-sweet chocolate chips
50-75 caramels

Mix cake mix, melted butter and 1/3 C. evaporated milk together. Spread half of this in a lightly greased 9x13 inch pan. Bake at 350 degrees for 6 minutes. Sprinkle on chocolate chips. Melt caramels with remaining 1/3 C. evaporated milk, stirring constantly. Drizzle over chocolate chips. Crumble and pat remaining cake mix on top. Bake 20 minutes at 350 degrees. Cut when cool.

Quick Apple Crumble

4 T. plus 1 tsp butter
5 large apples, peeled, cored and sliced
1 tsp ground allspice
1/2 tsp ground cloves
1/2 C. all-purpose flour
1/2 C. granola
1/3 C. sugar
1/3 C. apple cider

Preheat oven to 350 degrees. Grease bottom of large baking dish with 1 tsp of butter. Place apples in dish and toss with half the allspice and cloves. In a bowl, mix flour, granola, sugar and remaining allspice and cloves. Cut butter into small cubes and work with hands into flour mixture until it resembles small peas. Spoon topping over apples; pour in cider. Bake 30-35 minutes or until apples are tender and topping is golden brown.

I ate this with vanilla ice-cream. YUM!

Key Lime Pie

9" baked pie shell
4 eggs
2/3 C. fresh key lime juice
1-1/4 C. sweetened condensed milk
whipped cream

If necessary--bake pie shell and let cool. Blend eggs until frothy. Add lime juice and sweetened condensed milk and whip WELL. Bake 12 to 15 minutes at 400 degrees. Serve topped with whipped cream.

Fruit Dessert Elegant

1 pkg raspberry Jell-o
1 T. sugar
1/8 tsp. salt
1 C. boiling water
1 box frozen raspberries, thawed
1 (8 oz) can crushed pineapple
1 C. sour cream
2 med. bananas, sliced
1 C. mini marshmallows
1/2-1 C. chopped walnuts

Dissolve Jell-o, sugar and salt in boiling water. Add 3/4 C. combined fruit syrups (raspberries & pineapple) to gelatin. Chill until very thick. Then whip until fluffy. Beat sour cream smooth and fold into gelatin. Stir in drained fruits, nuts and marshmallows. Chill 15 minutes. Re-stir and pour into mold (if you are using a mold). Chill until firm.

Fudge Cake (no eggs or milk)

1 1/2 cups sugar
1/2 cup cocoa
1 1/2 teaspoons baking soda
2 cups flour
3/4 teaspoon salt
1 1/2 teaspoons vanilla
3/4 cup vegetable oil
1 1/2 cups water
1 1/2 teaspoons vinegar

1. Preheat oven to 350 degrees.
2. In an ungreased 9 x 13 pan- yes UNgreased, sift all dry ingredients.
3. Add the liquids and stir just until blended.
4. Bake for 25 minutes.
5. Frost with your favorite frosting, cake is extremely moist so care must be taken that you don't tear up the top of the cake

Apple Chip Cake

4 C. apples, diced
2 C. sugar
1 C. oil
2 eggs
2 C. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 C. chopped nuts

Combine sugar, oil and eggs. Add dry ingredients (flour, salt, soda and cinnamon). Stir in apples and nuts. Pour into 9x13 inch dish. Bake at 350 degrees for one hour.

Choose a good baking apple like Rome Beauty or Granny Smith for best results.

Apple Crisp

6 apples, sliced
1/2 cup water
1 1/2 cup sugar
12 TBS butter, melted
2 sts cinnamon
1/2 tsp salt
1 cup flour
Preheat oven to 350 degrees. Arrange apples in a 8 or 9" square baking dish. Add water. Combine sugar, flour, salt and cinnamon. Blend in melted butter until crumbly in consistency. Pour over apples. Bake uncovered for 1 hour. makes 12 servings.
