<u>One Dish Chicken and Rice</u>

This is the Weight Watchers' version of this popular dish. For those counting points, it yields 4 servings at 6 points per serving. I prefer the "creamier rice" option. It's very good!

1 can condensed cream of mushroom soup--98% fat free (70 calories)
1 C. water
3/4 C. regular, uncooked white rice
1/4 tsp. paprika
1/4 tsp. pepper
1 tsp. garlic salt
4 boneless, skinless chicken breasts

In a 2 quart shallow baking dish, mix soup, water, rice, paprika, pepper and garlic salt. Place chicken on rice mixture. Sprinkle with more paprika and pepper if desired. Cover and bake at 375 degrees for 45 minutes. For creamier rice, increase water to 1-1/3 cups.

Really great oatmeal cookie recipe....

I have been addicted to these cookies lately, and Julia and I have been baking them all the time. It's a wonderful activity, and it takes a good hour, so I've had alot of fun with her


COOKIES FOR ROOKIES:

1-1/4 cups whole wheat flour
1 cup quick-cooking oats
1/2 tsp each baking soda and salt
3/4 cup packed brown sugar
1/3 cup margarine or butter
1/3 cup light peanut butter
1/3 cup soya milk, or homo milk
1/3 cup mini choc chips or raisins (I don't put either)

1. Preheat oven to 350. Spray cookie sheet with non-stick spray and set aside.

2. In a medium bowl, combine flour, oats, baking soda and salt. Set aside.

3. In another medium bowl, cream together brown sugar, margarine, peanut butter, and milk. Beat untill very smooth and creamy. Add dry ingredients and stir to form a smooth dough. (I have a Kitchenaid, and beat it on Medium for about 30 seconds till it all comes together nicely.)

4. Roll into 1 -1/2 inch balls, and place 2 inches apart on prepared cookie sheet. Using a fork dipped in sugar, flatten cookies to 1/4 inch thickness.

5. Bake for exactly 10 minutes., Be careful not to overbake, as cookies will dry out.

6. Remove cookies from tray immediately and cool on wire rack. Store covered in an airtight container.

Makes 30 cookies.


These are really yummy, and as you can see, reasonably healthy too. I modified a recipe and tinkered with it to incorporate the soy milk and whole wheat flour, and this works perfectly everytime.

Oven baked pasta sauce - super quick- super tasty!!

I have had so much success with this little recipe that I have made for a one pot, no prep pasta sauce, and it's so good, I wanted to share it. It literally takes five minutes to prepare, and is amazing.

1 can diced tomatoes
1 can pre-made sauce ( I use tomatoe basil)
1 onion chopped ( I buy the frozen chopped onion, saves tons of time)
1 green or red pepper chopped (again, I use frozen chopped peppers)
2 tsp minced garlic
2 tsp dry basil
1 tsp oregano
Salt & pepper to your taste
1 pound raw ground meat, I use ground chicken (or cut up four lean sausages.)

Mix everything together in a roasting pan, and cover and bake in the oven for 1 1/2 hours at 323 F. Sprinkle the top generously with parmesean cheese, then return to the oven for about 20 more minutes.

This is so delicious, you would never even know the ingredients were not sauted, and I am a huge "must be sauted" type of girl. The only non-homemade part is the premade sauce, but I just think it adds a nicer consistancy to the sauce. Tonight I didn't have the parm, and it made a big difference to the taste.

If you are ever in a rush, this is so quick and easy, and so darn good Just wanted to share. I imagine it could work in the crock pot as well, I'll have to try that.

Thumbs up The best onion dip

My MIL made this the other day for a birthday dinner and it was fabulous and so simple to make!

1 cup mayo
8 oz cream cheese
one large onion finely diced

Mix together and bake at around 300 for 20 minutes or so.

She served with baked pita chips. It was really, really good - a little rich but good.
