Merrill's Kick Arse Pot Roast

Layer crocket pot with carrots, celery, and onion. I like to keep them pretty long and large so they don't get mushy.

Brown a chuck roast in some oil - all sides. You just want to brown the outside, so don't worry about really cooking it.

Put roast on top of veggies. Add packet of McCormick's stew seasoning (any brand works fine). Cover and cook on high for about 8-10 hours.

Towards the end, add as many red skinned taters as you can on top of the meat. Let them cook until they are soft. Remove and mash with butter and milk. Serve on side.

Note that you do not add any liquid to this dish. Believe it or not, it makes its own yummy juice.

Pulled BBQ Chicken

This is my favorite recipe, and I made it up... not too inventive, but swallow your tongue yummy

4-6 boneless chicken breasts
1 bottle of your fav. bbq sauce (I use sweet baby ray's honey bbq)
1 small onion chopped

Place chicken on the bottom of the pot, then top with the onion then 3/4 bottle of bbq sauce (reserve the rest for topping the bbq when serving)
cook on low for 6 hours... chicken will shred easily with a fork, shred it up and then serve on buns OR I usually serve it just on a plate with a side of coleslaw and baked apples. Soooo yummy and soooooooo easy! (all of my friends say this is their favorite of my dishes)

I just have to say this is the BEST sticky in ALL of STORKNOTES!
