View Full Version : Looking for a fruit salad recipe ( more inside)

I was recently at a "Military function/picninc" potluck and tried a yummy fruit salad that someone brought. It had itty-bitty tiny ( and I mean tiny ) bits of pasta ( or like ) and oh it was devine!!!
I wish I would of asked around as to who brought it but it was so busy that day!!
Any recipes?

Can you tell us more about it? Was it cream-based or oil-based? Was it heavy on the fruit, or was the fruit just a feature of the entire salad? What kind of fruit was it?

I make a saffron orzo (rice-shaped) pasta salad with mint, currants, yellow peppers, it's not "fruit salad" but it's kind of sweet and spicy. Here's the recipe:

If it's the salad I'm thinking about, here's the recipe....

Sweet Pasta Salad
1 cup acini di pepe pasta (or orzo)
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (15 ounce) can mandarin oranges, drained with liquid reserved
1 (8 ounce) container frozen whipped topping, thawed
7 ounces miniature marshmallows
1 cup white sugar
2 eggs, beaten
1/2 teaspoon salt
3 tablespoons all-purpose flour
1 jar maraschino cherries, drained (opt)

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.
In medium saucepan, combine reserved liquids from pineapple and oranges (equals about 1 1/2 cups), sugar, eggs, salt and flour. Cook until thick, stirring constantly. When mixture becomes thick, add cooked pasta and refrigerate overnight.
The next day, add pineapple and oranges, whipped topping and marshmallows to taste. Mix together and top with cherries if desired. Keep chilled until served.
