My 13 month old DD will only eat cheerios, crackers or basically anything dry and crunchy.
I am trying to find a recipe for some type of healthy cookie or cracker that somehow sneaks in some vitamins and protiens that she needs since she won't eat veggies or meat.
Anyone? TIA

I don't have any recipes...but could you spread a thin layer of peanut butter or a slice of cheese onto or betweenthe crackers or even rice cakes for some protein? I know that Gerber (I think that's the brand) has Wagon Wheels which are made with either fruit or veggies--they are dry and crunchy. Each wheel is about the size of a medium cookie. My kids love them.

I make crackers with infant cereal, olive oil and water. Maybe try subbing fruit or veggie juice for the water? I'll find the link or you can email me.

She does like the wagon wheels and I wish she would eat a cracker with cheese or peanut butter on it. She rejects it the minute she sees that it has something on it or looks different than her regular cracker. Ugh! She's not to be fooled!

I found nine different cracker recipes in the Super Baby Food book:
A Dozen Quick Crackers
1 cup Super Flour
1/4 tsp salt
4 Tbs cold-pressed canola oil (from natural foods store)
Gradually stir in 3-4 Tbs very cold water until dough is the consistency of pie crust. Refrigerate dough for 1 hour to chill. Roll very thin to 1/8-1/4 inch thicknes. Use pizza cutter to cut dough into rectangles, triangles, or other shapes. Prick air holes with fork all the way through the dough. Bake on oiled baking sheet for 10-15 minutes in a preheated 350 degree oven until lightly browned and crisp. (BTW, here is the Super Flour recipe: place following ingredients in a one-cup dry measuring cup--1 Tbs soy flour, 1 Tbs wheat germ, 1 tsp brewer's yeast, then top off the cup with whole wheat flour to fill).

Peanut Butter IN the Crackers
1 cup Super Flour
2 Tbs melted butter/oil
2 Tbs softened peanut butter
1/4 cup milk
Combine ingredients. Add extra milk, a tsp at a time, until a soft dough is formed. Knead 5 times and roll until 1/8 inch thick. Use pizza cutter to cut almost through dough to form rectangular shaped crackers. Prick air holes in each cracker with a fork completely through the dough. Bake about 12 minutes or until lightly browned in a preheated 325 degree oven.
Whole Grain Cheese Thins
Mix in this order:
1 cup Super Flour
1/2 teaspoon salt
1/4 tsp paprika
2 cups grated Cheddar cheese
2 Tbs oil
2 Tbs melted butter/oil
Shape into roll and refrigerate overnight in wax paper. Slice very thin, shape into fish or crescent designs and bake on greased or oil-sprayed cookie sheet in preheated 350 degree oven for about 10 minutes, watching carefully at end of baking time for burning. Store in airtight container for up to two weeks in a cool, dark cabinet.

Applesauce Crackers
1 cup Super Flour
1/2 cup plus 1 Tbs applesauce
4 Tbs melted butter/oil
Roll and bake 10 minutes in a preheated 350 degree oven. Flip each cracker over and bake for another 5-10 minutes.

Super Flour recipe:

It's something the author swears by!!!

Oatmeal Cookies-
1c Oatmeal Cereal with Iron
1/8c Olive oil
1T sugar
mix well
Stir in 1/4c or so of water (add water until you can drop onto cookie sheet or roll out and cut into fun shapes)
Bake at 375 for 8-10 minutes.
Spread onto paper towels while still hot (to soak up any grease).
The above recipes look great, but remember to use caution with peanut butter unless she has already had it and shown no hints of allergy- though not as common as a milk allergy, peanuts are a more deadly allergy.
