View Full Version : how do you cook salmon in oven/grill and skillet?

I have two frozen fillets that I'd ideally like to cook in the oven with some yummy marinade or seasoning. Can you help me? TIA

I alternate between the following ways of baking salmon:

Dilled Salmon
Place fish on foil sprayed with pan spray. Mix 1 cup mayo with 3-4 tablespoons dill, 1 T lemon juice, and 1 tsp garlic salt. Spread the mayo/dill mixture evenly over the fish. Bake at 400 for 20 min. or until fish flakes easily. If the topping starts to brown, cover loosely with foil. Serve any left over dill sauce on the side as you would tartar sauce.

Easy Baked Salmon
Place fish on foil sprayed with pan spray. Season the fish with the juice of 1 lemon, garlic salt and pepper. Place onion slices on top of fish. Cover loosely with foil. Bake at 350 for 20 minutes. Uncover fish and bake an additional 10 minutes or until fish flakes easily. Remove onion slices and serve.

here are 2 of my favorite sauces (marinades)

SALMON SAUCE
2-3 stalks of green onion finely chopped
2 cloves garlic minced
3-4 tbsp soy sauce
1-2 tsp sesame oil
2-3 tbsp ketchup
salt and pepper, to taste
2-3 tbsp hoisen sauce
2-3 tbsp wine
2-3 tbsp honey
little minced ginger

mix all together

soak salmon in half of it then baste on the grill with the other half

or you can just put it on and bake..



Honey-Chipolte-Ginger Salmon

It is from Latana's restaurant on the Grand Cayman island. Its a great sweet, a little salty, spicy, smokey combo!

4 servings:
6 tablespoons honey
1/4 cup chopped fresh cilantro
1/4 cup hoisin sauce
1 1/2 tablespoons minced fresh ginger
1 tablespoon chopped canned chipotle chilies (my preference would be to add a bit more)
1 tablespoon golden brown sugar
4 8-ounce salmon steaks

Stir honey, cilantro, hoisin sauce, ginger, chilies and brown sugar in a bowl to blend.

bake 350. Sprinkle with salt and pepper. Brush with some of the honey ginger glaze. Bake until opaque in center, basting ccasionally with remaining glaze, about 4 minutes per side. Transer to plate and serve.

i would suggest setting some sauce aside for dipping!

This is the only way I am allowed to serve salmon now, LOL.
Even when we go to restaurants, my family will say "This is good but it needs your mango sauce"

I don't remember where I got it.
You don't need to make the beans, but I like them.

Salmon w/ black beans and mango mustard

1 (1.5-lb.) salmon fillet
1 can (15-oz.) black beans
1/2 cup chopped and seeded red or green bell pepper
2 teaspoons dried onion
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
3/8 teaspoon garlic powder, divided
1 cup sliced, peeled and pitted mango
1/2 tablespoons cider vinegar
1 1/2 tablespoons Dijon mustard



Season salmon with salt and pepper to taste. Grill or bake salmon at 425°F for 10 minutes per inch of thickness, or until fish flakes easily with a fork. Hold warm.

Meanwhile, drain beans, reserving 1/3 cup liquid. In a small saucepan, combine beans, reserved liquid, bell pepper, onion, cumin, coriander, chili powder, ¼ teaspoon garlic powder and salt to taste. Cook over low heat for 5 minutes.

Combine mango, cider vinegar, mustard, remaining garlic powder and salt and pepper to taste in a food processor or blender; process until smooth. Transfer to microwavable dish. Heat 1 to 2 minutes until warm.

When I was growing up, this is the only way my mom ever made salmon. Imagine my surprise when I found out that salmon was a fish--not a recipe!

Lay fillet on shallow baking pan. (I use aluminum foil under it.)

Pour a little bit of Liquid Smoke over fillet.
Top with pats of butter/margarine, sprinkle with brown sugar.

Bake at 325-350 until done--bigger fillets will require more time, obviously. But it doesn't take very long so keep an eye on it.

I can't wait to try some of the other recipes!!

Any good recipes? Also, how do you cook it on the grill? I tried once and had a terrible time with it falling apart. And how do you know when it's done? I was so afraid I was giving my kids half raw salmon. Thank you.

Oooohhh! Salmon! I think with salmon the best thing is to keep it simple!

For 1 lb fillet:

1/2 tsp. salt
dash pepper (I use more)
2 Tbsp butter or marg., melted
1 Tbsp lemon juice
1 tsp finely chopped onion

Drizzle the melted butter/marg over fillets. Mix lemon juice and the other ingredients and pour over fillets. I also sprinkle with chopped parsley or dill weed.

Bake in 400 F oven until fish flakes easily with a fork (approx. 25 - 30 minutes).

To grill, put fillets on a sheet of tin foil (shiny side in). Follow above directions, wrap entirely in foil and grill until done.

Edited to add: fish is done when it flakes easily. It shouldn't look shiny anywhere.

We also use foil on the grill. In the oven, we broil it for a little while and then bake it until its done. We usually use herbs de provence on it. Simple but tasty. We eat salmon about once a week.

We use our George Foreman grill. We just puy a little garlic salt, pepper, and a little dill weed. It is ready in about 5-7 min. We make homemade pico de gallo and spoon on top ourselves after it is done. This is one of my husbands favorites and he is very picky.

It is also good to soak it in itallian dressing. I use the Zesty fat free version. YUMMY!!

Melt some margerine in a pan in oven at 450-500 degrees until it's light brown (you might want to put some foil on the bottom of oven), add fish to browned margerine cook 10 min. Flip over sprinkle with lemon juice, white wine, paprika, pepper and parmasean cheese, cook another 10 min.

My SIL cooked some salmon this way over the weekend, and it was some of the best salmon I'd ever had!

Put salmon fillets on foil, season with salt & pepper, splash about a tablespoon soy sauce and sprinkle a tablespoon brown sugar on each piece of fish. Fold the foil over to make a packet, and grill until the fish flakes easily. The sauce makes the fish super moist and tasty, but doesn't overpower the flavor of the fish. YUM!
