We are having an Officers' wives fund raiser bake sale this Friday and someone suggested making/baking ahead of time and freezing but I have never done this and wondered if they turn out "weird"?
Thanks!

I do this all the time. In fact I have some really fantastic texas sheet cake in my freezer as I type. Cookies turn out just fine and cakes. Brownies do well all sorts of baked goodies do well. Just make sure you have them in an air tight container.

Happy Baking!

A tip - If you're planning on freezing baked goods, remember that the freezing generally isn't the problem - it's the thawing. Make sure you don't have a build up of ice crystals in with your cakes & cookies. If there's a build up, try and remove as much as you can so your goodies won't get soggy as they thaw.
