View Full Version : Need 'savory' breakfast ideas

I need some breakfast ideas that can be made ahead of time. My DH loves breakfast, but I can't manage to pull myself out of bed to fix it. He prefers meat, cheese, egg type things, not waffles, pancakes, etc. Things that will stick with him until lunch. I have a breakfast casserole dish, but he says that it is too dry. I'll add it on here, tell me what to do differently. Any other ideas very welcome!!!
Breakfast Sausage Casserole
1 lb. sausage
6 slices toast, cubed
1/2 lb. mild cheddar
1 tsp. dry mustard
1/2 tsp. salt
4 eggs, beaten
2 C. milk
Mix all ingredients. Refrigerate overnight. Bake at 350 for 45-60 minutes.

Take two boiled eggs per person (boil them early in the day when already busy making lunch or something), wrap them in a layer of sausage (mash it flat and wrap it around the egg in a thin layer), then dip in eggwash and coat in breadcrumbs. The last step is deepfrying, so it can just sit in the fridge overnight and you can fry it in the morning. I haven't tried baking them, but you might want to give it a try- it works for fried chicken.

Maybe try substituting frozen shredded or hash brown style potatoes for the bread, that will add moisture rather than removing it. ???
I made this in the crock pot over night, it was really good!

I substituted Italian Sausage and used cheddar cheese. I think it would also be good with yellow and red bell peppers.

Have you seen at the grocery store the "Complete Dinner Bakes"? I think they are made by Banquet or something?? They have a "Cheesy Ham & Hashbrown" one that is great for breakfast!! It has everything you need...all you have to do is add water and it is fabulous and really really easy!!

My DH works pretty early in the morning, so I like to make breakfast burritos ahead of time. I don't have an actual recipe; I just use bacon, sausage or leftover meat with hashbrowns, eggs, salsa and cheese, and maybe with a dallop of sour cream and gaucomole if it's around; stuff into a warm tortilla (easier to fold when warm, just zap in the microwave for 20 sec.), wrap in saran wrap and refridgerate. All he has to do is throw it in the microwave, and he's all set.

Silly Mama, do you think those would freeze well? I think that's a great idea. I'd love to make something like that in advance.

OMG -- all those things are just LOADED with fat & cholesterol! That's not a good way to start the morning! How about a big bowl of oatmeal? It cooks in five minutes, it's very filling, and it has no fat or cholesterol. I stir dried fruit & nuts into mine, yummy yummy. Even if you add a bit of butter & brown sugar, it's a heck of a lot better than those casseroles & burritoes.
Another popular breakfast at our house: leftover baked potatoes chopped into pieces, saute with some salsa until hot, with some Fakin' Bacon (tempeh strips with smoky seasoning) or some leftover beans mixed in. Takes about five minutes, and very low fat & low cholesterol even if you sprinkle on a bit of cheese!
Quiche is a great way to use leftovers and it's easy if you use a prepared pie shell. It's quick (both to make, and to reheat in the morning) it's filling and, since you're making it & you control what's in it, it can be very nutritious! For breakfast, I like it made with spinach, mushroom & onion, with a bit of Parmesan cheese, or thinly sliced potatoes, eggplant, and roasted peppers, with a bit of Provolone or mozzarella cheese. After baking, let it cool then cut into pieces & wrap in plastic wrap or foil. Each piece can be warmed in the microwave or oven when it's needed, and the rest stays fresh & moist in the fridge for days.
When I was a kid, we would eat peanut butter & jelly sandwiches for breakfast. My step-dad used to throw a fit about that, but it actually is a very nutritious meal -- especially on whole wheat bread -- unless you go heavy on the jelly. Great protein, good carbohydrates, and not too much fat. It's fast & easy, and filling!:D

I always try to make breakfast that help us go until lunch, but lowfat ones. Bagels are a great help. I fill them with boiled eggs and/or lowfat ham, some low fat cheese is great too, we usually have some fruit, juice and coffee/tea and we´re ok until lunch, we both leave the house at 7 a.m or earlier, and we usually have lunch until 12 md. Bread it´s great too, white or whole weat bread, cheese, ham, jelly, or anything you want to add, as I said fruit as a part of our breakfast make us feel satisfied, yougurt is also a wuick and easy option, add it to the fruit with some granola, and you have a healthy and tasty breakfast.

Shannon ~ I have no idea if they would freeze well, but I've been curious myself.
Valerie ~ A "healthier" variation of the breakfast burrito: If your DH is watching his "girl-ish figure":D, then you could always substitute the eggs for soft tofu; add grilled vegetables or saute in olive oil with grilled meats and cheese, and wrap in a spinach tortilla or stuff in a whole grain pita.
Another healthy suggestion is cottage cheese with fruit. It's quick, simple and good for him.

I have another one!
Cheesy Bacon N' Apple Muffins
2 C. sifted all-purpose flour
1/4 C. sugar
4 tsp. baking powder
3/4 tsp. salt
1 C. milk
1/3 C. butter, melted
1 egg, slightly beaten
1/2 C. finely chopped unpeeled apple
3/4 C. shredded aged Cheddar cheese
2/3 C. crisp bacon, crumbled (about 8 slices)
In a large bowl, sift together flour, sugar, baking powder and salt. In small bowl, combine milk, butter and egg; stir into dry ingredients just until moistened. Fold in apple, cheese, and bacon crumbles. Spoon into buttered muffin cups, filling 2/3 full. Bake in preheated 400 degree oven 15-20 minutes or until golden brown. Remove from pain, Cool on wire rack. Makes 12-18.
Just tried them this morning. Very yummy!
