I need turkey left over ideas preferrably crock pot ones. Dh got for christmas at work a 29 lb turkey for just two of us!!

Here's on recipe I have...

Blanquette Of Turkey

Think of a blanquette as a "white stew." This is a great way to use up leftover turkey.

3 Tablespoons Butter
1 Onion, diced
2 Carrots, diced
2 stalks Celery, diced
3 Tablespoons Flour
4 cups Chicken broth
1 pound Turkey, cooked, large dice
2 Tablespoons Parsley, chopped
1/2 teaspoon Thyme
Salt and pepper to taste

Melt the butter in a heavy soup pot. Add the onions, carrots, and celery. Cook until just soft. Whisk in the flour and cook 5 minutes. Add the broth and stir until well mixed. Bring to just under a boil. Add the remaining ingredients, reduce the heat and simmer 45 minutes. Serve warm.

We had a lot of leftovers also.

We have had:
Turkey and rice mixed with gravy.
Turkey with cheese, wrapped in a flour tortilla.
We used it to make soup.

I use left over turkey for enchiladas, turkey divan, white chili, Waldorf Sandwiches, jambalya, and lots of other things! The Waldorf Sandwichs are a specialty of mine that DH requests often!

1 C diced white turkey meat
1/2 C mayo (sorry, miracle whip won't do!)
1 apple chopped
1 T lemon juice
2-3 tsp sugar
1-2 tsp curry powder
1/4 C cashews (optional)

Combine turkey with apples and cashews. Mix mayo, lemon juice, sugar and curry together. Start on the low end of the sugar and curry, and adjust to your taste. Pour over turkey and apples, mix well. Chill. This is wonderful on croissants!
