At last--the end of the alphabet!

This is my Grandma's recipe. It is so good! It's like cake!

<u>Zucchini Bread</u>

3 eggs, beaten
2 C. sugar
1 C. oil
2 tsp. vanilla
1 tsp. salt
2 tsp. baking soda
1/2 tsp. baking powder
3 C. flour
2 tsp. cinnamon
2 C. zucchini, washed and shredded raw
small can of crushed pineapple

Mix ingredients in order given. Bake in a greased loaf pan at 350 degrees for 1-1/2 hours or until done.

That's very similar to the recipe I use, only I find it makes enough for 2 loaves and I only bake them for about 50 minutes. I also like to sub applesauce for part of the oil. I just made some this week.

I have also heard of people baking the whole recipe in a bundt pan, which would make a really pretty presentation.
