This week: LETTER L!

Here are a couple of recipes to get us started:

<u>Lemon Bread</u>

1-1/2 C. flour
1/4 tsp salt
1 tsp baking powder
1/2 C. butter
1 C. sugar
2 eggs
1/2 C. milk
2 T. finely grated lemon rind
1/2 C. chopped nuts

Glaze:
2 tsp sugar
2 T. lemon juice

Preheat oven to 350. Blend flour, salt and baking powder. Cream butter, sugar and eggs. Add dry ingredients alternately to creamed mixture with milk. Fold in lemon rind and nuts. Spoon into greased loaf pan. Bake for 55-60 minutes or until done. Poke holes and spoon glaze over bread while still warm. Remove loaf from pan when cool.

<u>Layered Bean Dip</u>

1/4 C. sour cream
1/4 C. mayonnaise
1/2 packet taco seasoning
10-1/2 oz. bean dip or refried beans
2 avocados, mashed
1/2 C. cheddar cheese, grated
1/2 C. Jack cheese, grated
4 green onions, chopped
small can chopped olives
3 tomatoes, diced
tortilla chips

Mix together sour cream, mayonnaise and taco seasoning. Set aside. Use a 9 to 10 inch pan. Spread a layer of beans. Spread avocado over beans in an even layer. Spread sour cream mixture over top. Sprinkle on grated cheeses. Follow with layers of olives and tomatoes. Sprinkle green onion on top. Refrigerate at least one hour before serving. Ingredients can be adjusted according to number of guests.

<u>Lazy Lasagne</u>

1 lb. ground beef
1 15-oz can tomato sauce
1 large can diced tomatoes, including liquid
2 tsp chopped onion
1 tsp chopped garlic
1 tsp italian seasoning
salt and pepper to taste
2 c. hot water
2 c. egg noodles
1 c. cottage cheese
1 c. shredded mozzarella cheese

Using large skillet, brown ground beef, drain. Add tomato sauce and tomatoes, onion, garlic and seasonings. Heat through until simmering. Add hot water and noodles, cover and simmer until noodles are soft and sauce is thickened, 20 - 30 minutes. Gently stir in cottage cheese. Top with mozzarella and place under broiler briefly, just until browned. Serves 4 with leftovers.

Lemonade Pie

1 graham cracker ready-crust
1 small can pink lemonade, defrosted
1 can Eagle Brand sweetened condensed milk
1 large container of Cool Whip

Mix all ingredients together and pour into pie crust. Top with sliced almonds. Refrigerate overnight before serving.

Lemon Cheese Bars

1 Lemon flavor cake mix (pudding added)
1 8 oz. Cream cheese softened
1/3 cup sugar
1/3 cup oil
1 tsp. Lemon juice
2 eggs

Mix dry cake mix, 1 egg and 1/3 cup oil until crumbly.
Separate one cup and reserve.
Pat remaining mixture lightly in an ungreased 9x13x2 pan.
Bake for 15 minutes at 350 degrees.

While baking:
- Beat cheese, sugar, lemon juice and 1 egg until lightly smooth.

Next:
Spread cheese mixture over baked layer.
Sprinkle with reserved crumb mixture.
Bake 15 minutes longer.
Cool and cut into bars.

Store bars in refrigerator.

Lemon Grilled Salmon

2 tsp snipped fresh dill OR 3/4 tsp dill weed
1/2 tsp lemon-pepper
1/2 tsp salt, optional
1/4 tsp garlic powder
1 salmon fillet (1 1/2 lbs)
1/4 cup packed brown sugar
3 tbs chicken broth
3 tbs vegetable oil
3 tbs soy sauce
3 tbs finely chopped green onion
1 small lemon, thinly sliced
2 onion slices, separated into rings

Sprinkly dill, lemon-pepper, salt and garlic powder over salmon. Place in a large resealable bag or shallow glass container. Combine brown sugar, broth, oil, soy sauce and green onions; pour over the salmon. Cover and refrigerate for 1 hour, turning once. Drain and discard marinade. Place salmon skin side down on grill over medium heat; arrange lemon and onion slices over the top. Cover and cook for 15-20 minutes or until it flakes easily with a fork.

Serves 6

4 Poke holes all over the cake while hot.
5 Mix together: powdered sugar and lemons (grated rind and juices).
6 Pour this over the cake immediately, while it is still hot from the oven.
7 Serve warm or cold.

Mix cream cheese, sugar, lime juice, peel and vanilla on medium speed until well-blended. Add eggs. Mix until blended. Pour into crust. Bake in a 350-degree oven for 35-40 minutes. Cool and refrigerate.

This was very refreshing and had a subtle lime flavor that my family really enjoyed. Just thought I'd share!

Not at all healthy, but trust me you won't have leftovers!

Lemon Butter Chicken

1 lb chicken tenders
3/4 stick of butter
lemon juice to taste
salt to taste

Baked chicken tenders covered in 350 degree oven until opaque. Remove and cool. Shred into bite size pieces. Fry in butter until crispy. Pour lemon juice into pan to taste just before finished, toss to coat well.

Serve in tacos or on salad or just eat it plain!
Yummy!

For anyone that's ever gone to a pow wow and likes fry bread,and for those who have never had it,it tastes alot like a funnel cake or zeppoles.

3 cups of water
1 package of yeast
3 tablespoons of sugar
1 and half tablespoons salt
1/4 cup of oil
flour

Combne water,salt,sugar,yeast and oil.Stir in the flour until the dough is moist,but does not stick to the hands.Knead on a floured surface adding flour as needed.Knead until it feels satiny.Let it rest 20 minutes in a covered bowl.Pinc of a piece and gently stretch until flat and thin in the center.Fry in about 1/2 inch of hot oil until golden brown,turn over.The bread will tell you when it's ready-it will float in the oil.Eat it with powdered sugar,or cinnamon and sugar,or you can stuff them with cherries or apple pie fillings.
