I couldn't find much for this letter! This is the only recipe I could find and it is kind of a fudge since I had to put the "caramel" in parenthesis.
Also--this is a very old recipe of my grandma's and I don't have a cooking time for the cookies (her directions say to bake in a quick oven). I haven't made them in so long, I don't remember! But they should be nice and brown and have a bit of a crunch to them when done and cooled.
<u>(Caramel) Icebox Cookies</u>
1 C. shortening
2 eggs
2 C. brown sugar
3 C. flour
1 tsp baking soda
1 tsp cream of tartar
1/2 tsp salt
1 tsp vanilla
1 C. chopped nuts
Mix ingredients. Make 2 rolls. Chill rolls overnight in refrigerator. Slice and bake in a quick oven (350 degrees for ??).

Ice cream!! I make tons of it when the weather's good- I'm lucky to have a Magimix ice cream maker with its own freezing unit
Good ol' vanilla made with a custard base:
3 egg yolks
2 tablespoons sugar
1 vanilla pod (bean?)
1/2 pint full cream milk
1/2 pint double (heavy?) cream
1/2 a teaspoon cornflour (cornstarch?)
First make the custard. You do this by bringing the milk & cream to just below boiling. Then you infuse the vanilla pod (scrape all the seeds into the milk & cream - never mind the flecks, the flavour is amazing) for about an hour.
Beat the egg yolks with the sugar & cornflour (cornstachh?). Pour the infused milk/cream onto them & beat. Strain this back into the saucepan and heat VERY VERY GENTLY- DON'T BOIL!! til it thickens to a custard that will coat the back of your wooden spoon. The cornflour is there to stop the custard curdling if you overheat the eggs- but I try not to take the chance
Then allow the custard to cool. Stop a skin forming by sprinkling sugar very finely on the surface and covering with cling film.
When cool, churn into icecream. Either use a machine or freeze in a plastic tub. If you use the second method, you will need to allow the icecream to partially set for an hour, then bring it out & beat the ice cream smoothly. Return to freeze and repeat. This stops ice crystals and keeps an even texture.
The good thing is once you've mastered basic banilla you can experiment by adding fruit coulis, melted chocolate etc etc etc- you'll soon be as addicted as me

Indoor S'mores
(this was taken from one of the name brands below, I just don't remember who.)
8 cups Golden Grahams cereal (one 13-oz. Box)
1 1/2 cups Nestle’ Toll House Milk Chocolate Morsels*
6 cups miniature marshmallows (one 10-oz bag)
5 Tbsp. Butter or margarine
1/4 cup light corn syrup
Melt 5 cups marshmallows (save 1 cup for later), chocolate morsels, butter and corn syrup in 3-quart saucepan over low heat, stirring occasionally. Remove from heat. Stir in vanilla. Butter 13x9x2-inch pan.
Pour Golden Grahams cereal into a large bowl. Pour marshmallow mixture over cereal; stir until evenly coated. Stir in remaining marshmallows.
Press mixture into pan with buttered back of spoon. Cool at least 1 hour or until firm. Cut into 24 bars. Store loosely covered at room temperature.
* Although milk chocolate is recommended, Nestle Toll House Semi-Sweet Chocolate Morsels can be used.

Chicken Breasts
Jarred Spagetti Sauce (a thick brand works best)
Zuchinni or other favorite squash or veggies
Provolone Cheese (or other favorite)
Place one chicken breast on each foil packet, spoon enough spagetti sauce over it to cover, but not a ton of extra because the juice from the chicken will add to the amount of liquid in the final dish, place veggies over and around chicken and close up foil packet.
Bake in 400 degree oven for about 30 minutes. Open carefully there will be lots of steam and hot liquid. Place all contents on top of pasta and top with slices of provolone. The heat from the cooked food will melt cheese a bit.

Indonesian Salad
1 head of cabbage, shredded
4 Tblsp chopped chives (or 4 Tblsp dehydrated)
4 Tblsp chopped parsley (or 4 Tblsp dehydrated)
1/2 can spanish peanuts
1 cup uncooked defrosted peas
Dressing: 1 cup mayonnaise with 1 Tblsp curry powder
**I'm making this again for the 4th and just wanted to share. It's a must-try if you like curry!
