Okay everyone--we've been slowing down on these topics! I feel like I am posting alone here. Dig out those recipes! http://www.storknet.com/boards/biggrin.gif
<u>Rocky Road Candy</u>
1 (12 oz) package of semisweet chocolate chips
1 (14 oz) can of sweetened condensed milk
2 T. margarine
2 C. nuts
1 (10-1/2 oz) bag mini marshmallows
Place chocolate chips, sweetened condensed milk and margarine in top of a double boiler. Cook over medium heat until chocolate and margarine are melted. Stir constantly.
Remove from heat. Stir in nuts and marshmallows.
Line a cookie sheet with waxed paper. Drop spoonfuls of candy on top. Refrigerate for several hours.

Raspberry Lemonade
2 cans (12 oz each) frozen lemonade concentrate, thawed
2 packages (10 oz each) frozen sweetened raspberries, partially thawed
2-4 tbs sugar
2 liters club soda, chilled
Ice cubes
In a blender, combine lemonade concentrate, raspberries and sugar. Cover and process until blended. Strain to remove seeds. In a 4 1/2 qt container, combine raspberry mixture, club soda and ice cubes; mix well.
Makes about 3 1/2 qts

Rice Pudding (Crockpot)
8 cups of milk (1/2 gallon)
1 cup of rice (not minute rice)
1 cup of sugar
1/4 tsp cinnamon
1 tsp vanilla
3 tsp butter
Combine everything in crockpot and cook on high for 4-5 hours. Tastes great!

Roast Beef Sandwiches
Low Fat Version
1 lb lean roast beef (I get Boars Head @ Publix)
1 Tbsp low fat margarine
1 tsp minced garlic
2 Tbsp ketchup
4 Tbsp worcheshire
1 bottle dark beer (I use killian's Red)
1 tsp sweet basil
1 tsp cayenne pepper
1 tsp blk pepper
Wheat Sub rolls.
Spicy brown mustard.
lf or ff Mozzarella Cheese
Add margarine to skillet on med high heat. Add garlic and cook f/2 minutes. Add remaining ingredients and heat to boil. Turn down to simmer.
Drain meat in collander over bowl. Reserve sauce.
Place roast beef on sub roll w/spicy mustard. top w/lf or ff mozzarella cheese. Bake @ 350 f/15 minutes.

RAFFERTY'S POTATO SOUP
8 potatoes peeled and cubed
1 large onion chopped
8 oz cream cheese
1 can Cream of Celery Soup
1 can Cream of Mushroom Soup
green onions
finely grated cheddar cheese
bacon bits
Place potatoes and onion in large pan and add water to about 1" above. Cook until potatoes are tender.
Remove from heat. Cut cream cheese into small pieces, add to potatoes, and stir until dissolved.
Add cans of soup. Return to low heat until hot. Season to taste with salt, garlic salt and pepper.
Pour into bowls and garnish with chopped green onions, cheddar cheese and bacon bits.
