This week: Letter N!
<u>No-Bake Cream Cheese Pie</u>
No-bake ready graham cracker crust
3 oz. cream cheese
14 oz. can Eagle Brand sweetened condensed milk
1/3 C. lemon juice
1 tsp. vanilla extract
1 can chilled pie filling (cherry, blueberry, etc.)
Soften cream cheese and mix with a mixer until fluffy. Slowly add the can of milk. Once all fluffy, add lemon juice and vanilla. Pour into crust and chill for 2 hours. To serve: top whole pie with pie filling or top individual pieces as desired.

OH, Elsie, I LOVE that pie!!
Here's another No-Bake
No Bake Cookies
1 stick margarine or butter
2 cups sugar
4 T cocoa
1/2 cup milk
1/2 cup peanut butter
2 1/2 cups quick oats
1/2 cup chopped nuts ( like walnuts!)
Melt butter in large saucepan, add sugar, cocoa and milk, bring to a boil and let boil for 1 1/2 to 2 minutes. Add peanut butter, oats and nuts, mix well. Drop by teaspoonfuls onto waxed paper, refrigerate until hardened. I've also just left them on the counter to harden (as soon as you can possibly pick them up, my kids start eating them!!) YUMMMMY!!

<u>No Bake Peanut Butter Bars</u>
Ingredients
1 1/2 cups margarine, melted
2 cups peanut butter
4 1/2 cups confectioners' sugar
2 cups graham cracker crumbs
1/2 cup margarine
2 cups semisweet chocolate chips
Directions
1. Grease a 10x15 inch pan. In a large bowl, combine 1 1/2 cups melted margarine, peanut butter, confectioners' sugar and graham cracker crumbs. Spread in prepared pan.
2. Combine 1/2 cup margarine and chocolate chips in a medium saucepan over medium-low heat. Stir occasionally until melted and smooth. Spread over peanut butter mixture. Let cool completely before cutting into bars.

Napa Cabbage Salad:
3 tablespn Sesame Seeds
½ Cup Cashews
6 oz bag of Almond Slivers
1 package of Ramen Noodles (Any flavor - you do not use seasoning packet)
2 tablespoons butter
- Melt butter in pan, add almonds, cashews, breakup Ramen noodles and then add sesame seeds. Toast until golden brown on medium heat. Be careful not to burn these, as they brown quickly if you don’t keep an eye on them.
-Once browned, cool on plate or cookie sheet. Reserve mix until you are ready to serve salad.

2 heads of Napa Cabbage - thinly sliced
1 Red Bell Pepper- small diced
1 Yellow Bell Pepper - same
1 Green Bell Pepper - same
5-6 green onions
¼ stun black pepper
- Combine all veggie ingredients in large bowl. (This salad will shrink, once you marinate in dressing. You can transfer the salad to a smaller bowl once this occurs.)

Dressing/Marinade:
¾ Cup Olive Oil
½ Cup Raspberry Vinegar
½ Cup Sugar
-Combine the above ingredients and wisk briskly until combined well and sugar dissolves.
-Marinate and chill the veggie portion of the salad 1 hour prior to serving.
-Add nut/noodle mixture and toss just before serving, so the mixture will stay crisp.

Original NILLA Banana Pudding
Makes 8 servings
Ready in: 60 mins.
Layers of Nilla Wafers, creamy pudding and fresh banana slices are the stars of this American classic.
INGREDIENTS
35 to 45 Nilla Wafers, divided
5 to 6 ripe bananas, sliced (about 4 cups), divided
3/4 cup sugar, divided
1/3 cup all-purpose flour
Dash salt
4 eggs, separated
2 cups milk
1/2 teaspoon vanilla extract
INSTRUCTIONS
1. Reserve 10 to 12 wafers and 1 banana for garnish.
2. Mix 1/2 cup sugar, flour and salt in top of double boiler. Blend in 4 egg yolks and milk. Cook, uncovered, over boiling water, stirring constantly for 5 minutes or until thickened. Remove from heat; stir in vanilla.
3. Spread small amount of custard on bottom of 1 1/2-quart casserole; cover with a layer of wafers and a layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers of each, ending with custard.
4. Beat egg whites until stiff but not dry; gradually add remaining 1/4 cup sugar and beat until stiff peaks form. Spoon on top of pudding, spreading to cover entire surface and sealing well to edges.
5. Bake at 350°F for 10 to 12 minutes or until browned. Cool slightly or refrigerate. Garnish with reserved banana slices and wafers just before serving.

Vanilla wafers, pudding and fresh bananas are layered for a quick All-American dessert.
INGREDIENTS
2 pkg. (4-serving size each) JELL-O Chocolate or Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling
4 cups fat free milk
47 NILLA Wafers, divided
5 to 6 medium ripe bananas, sliced (about 3 cups), divided
2 cups thawed COOL WHIP LITE Whipped Topping
PREPARATION
Prepare pudding with milk as directed on package.
Spoon 1/2 cup pudding in bottom of 2-qt. serving bowl. Top with 8 wafers, generous layer of sliced bananas and 1 cup pudding. Stand 12 wafers around outside edge of dish. Continue layering 12 wafers, sliced bananas, 1 cup pudding, 15 wafers, sliced bananas and remaining pudding. Cover.
Refrigerate 3 hours or overnight to soften cookies. To serve, spread whipped topping over pudding. Garnish with additional banana slices, if desired.
Special Extra:
For individual servings, prepare pudding as directed. In each of 8 dessert dishes, stand 4 to 5
wafers around outside edge. Layer pudding with half the banana slices. Garnish with remaining bananas, whipped toping and remaining wafers.

4 strips bacon, cooked and crumbled
1 cup sharp cheddar cheese, grated
1 teaspoon green onions or chives, chopped
½ cup mayonnaise

Recipe
Preheat oven to 350 degrees. Spread almonds on cookie sheet and roast in oven for 10 minutes or until roasted. Fry four bacon strips until crispy. Let bacon cool and then crumble. Combine all ingredients until well mixed.
Spread on party crackers such as Triscuits or Wheat Thins.
