We got a lot of responses last week! Yay! This week: Letter T

This is another Weight Watcher's recipe. It is so good! The only bad thing about it is that I can sit and eat the whole bowl by myself.

<u>Tabouli</u>

1 C. dry bulgur wheat
1-1/2 C. boiling water
1 tsp. salt
1/4 C. fresh lemon juice
2 T. olive oil
2 garlic cloves, crushed
pepper to taste

4 scallions, finely minced (white and green parts)
1 C. packed minced parsley
10 to 15 fresh mint leaves, minced
2 medium tomatoes, diced

Combine bulgur and boiling water in large bowl. Cover and let stand until bulgur is tender (20 to 30 minutes). Add salt, lemon juice, olive oil, garlic and black pepper. Mix thoroughly. Cover and tightly refrigerate until about 30 minutes before serving. Add remaining ingredients. Serve cold.

Twice Baked Potatoes

**NOTE** all ingredients are on a per whole potato basis

Baking Potatoes *try to pick ones that are long and plump

2 to 3Tbsp Butter
4 Tbsp. sour cream
1/4 cup shredded cheese
1/8 cup spring onions-chopped *optional
Salt and pepper
Additional Shredded cheese for topping
2 slices Bacon- cooked and drained

Preheat oven to 400* Bake potatoes uncovered until done. Remove and split potatoes length wise into halves. With spoon scoop out insides into large bowl *careful not to get too close to the skin otherwise it will break. Place hull of potato onto baking rack. Add to potato mixture butter, sour cream, cheese, salt, pepper and spring onions. Mix well and fill potato "hull" with mixture careful not to overfill. Top with crumbled bacon and more shredded cheese. Place back into oven until cheese melts.

Taco Dip

16 oz. Sour cream
8 oz. Cream cheese
1 package taco seasoning mix

Beat together.
Spread over bottom of a deep 10” pie plate.
Refrigerate.

8 oz. Shredded Sharp cheese (or Mexican blend)
lettuce
tomatoes
onions
green peppers
black olives (optional)

Chop vegetables on paper towels to absorb excess moisture.
Top dip with chopped vegetables.
Top vegetables with shredded cheese.
Serve with Mexican style chips.

Turkey Wraps (great for lunch)

tortilla
shredded cheese
fat-free dressing
green onions chopped
chopped sun-dried tomatoes in oil
sliced turkey

Layer all on tortilla, roll up, cut in half and enjoy!!

Would you share your recipe for Teriyaki Pan-fried noodles? Sounds good. TIA!

The following is my own recipe for teriyaki sauce. My kids have suggested that I market the stuff, they love it so much! It's fairly easy to make, and much cheaper than the store bought stuff...
I use for a lot of things; wings, chicken strips, burgers, salmon, pork, you name it!

The recipe makes about 5 cups of sauce, but it keeps well in the fridge.

Teriyaki Sauce
2 C soy sauce
2 C brown sugar
1 1/2 C ketchup
2 Tblsp dried minced garlic
1 Tbsp sesame oil.

Teriyaki Pan-fried Noodles
3-4 cups al dente Vermicelli or Thin Spaghetti (cooled and rinsed)
2 Tbsp olive oil
1-2 tsp sesame oil
2-3 Tbsp teriyaki sauce
1/4 C cabbage
5 baby carrots julienned
2 green onion, sliced
1 egg beaten

Heat the oils and teriyaki sauce in a large skillet or wok over med-hi heat. Add the veggies and stir to coat. Add the noodles, lifting and stirring until all noodles are coated. Continue to stir fry until noodles are lightly browned. Add additional teriyaki sauce to suit your taste. Push noodles to one side, and scramble egg. Stir egg and onion into noodles, serve with grilled marinated Teriyaki Chicken and steamed vegetables.

If desired, sprinkle noodles with toasted peanuts or cashews.

Note: My kids prefer the noodles without any veggies, but I like the added color and flavor they give.
