got this from a friend and it was a hit!! Great for lunch the next day, too! We served them with rice.
Chicken Caeser Salad Wraps
2 boneless, skinless chicken breasts
Olive oil
2 garlic cloves, pressed
1/4 cup red pepper (I left this out)
Parmesan Cheese
4 cups romaine lettuce, thinly sliced
3/4 cup seasoned croutons
1/2 cup Caeser Dressing (can use fat free)
6 (8 inch) tortillas (I used fat free)
1. Lightly brush chicken with olive oil. Press garlic firmly into chicken. Heat small pan over medium until hot. Cook chicken 15-20 minutes or until no longer pink in the center. Remove chicken from pan; cool. Slice into 1/4 inch strips. Place chicken in bowl.
2. Add remaining ingredients (minus the tortillas and parmesan) and toss mixture to evenly coat with the dressing.
3. For each wrap, place about 3/4 cups of the mixture on tortilla. Sprinkle with parmesan and then roll. To serve, cut each roll in 1/2 diagonally using a serated bread knife.
Serves 6. YUMMY!!!

I have noticed several of you have wraps or roll ups on your menus. I had a beef, wild rice, lettuce and tomato one with cesear dressing last week and it was awesome. I am kind of in a wrap phase right now so I was wanting any ideas/recipes. Plus I figure they are easy.

Spicy Ranch Chicken Wraps
From Cooking Light
2 teaspoons chili powder
2 teaspoons vegetable oil
1 1/2 teaspoons ground cumin
1/2 teaspoon salt
1 1/4 pounds skinned, boned chicken breast, cut into 1/2-inch strips
1/2 cup low-fat buttermilk
1/4 cup light mayonnaise
2 tablespoons minced fresh parsley
2 tablespoons fresh lime juice
2 jalapeno peppers, seeded and diced (i use 1 large or 2 small)
2 garlic cloves, crushed
4 (8-inch) fat-free flour tortillas
3 cups chopped romaine lettuce
1 1/3 cups chopped seeded tomato
Combine the first 4 ingredients in a heavy-duty zip-top plastic bag. Add chicken; seal and shake to coat. Remove chicken from bag. Combine the buttermilk and next 5 ingredients (buttermilk through garlic) in a small bowl, and stir well with a whisk.
Place a large nonstick skillet over medium-high heat until hot. Add chicken, and sauté 2 minutes or until chicken is done. Add the buttermilk mixture; cover and cook 1 minute. Remove from heat.
Warm the tortillas according to the package directions. Spoon about 3/4 cup chicken mixture onto each tortilla, and top each serving with 3/4 cup chopped lettuce and 1/3 cup chopped tomatoes. Roll up wrap.
Yield: 4 servings (serving size: 1 wrap)

The Asian ones I made last night were AWESOME!
Sauce:
2 T crunchy peanut butter
2 T teriyaki glaze
2 T hot water
1 t sesame oil
2 T brown sugar
You mix that up and spread about a T of it on a tortilla. Then you add deli chicken, grated carrots, green onion, sliced red bell pepper, shredded lettuce, and cilantro.
I love cilantro so I used a lot on mine. I might also add a little red pepper flake to the sauce next time.

Wraps are very versatile, and adaptable to just about any taste. Any cooked sliced meat will work, with a crunchy ingredient like shredded lettuce, cabbage, Jicama, carrots, sliced cukes, you name it!
Add a sauce you like and you're done! I use Hoisin sauce, Teriyaki sauce, and all kinds of salad dressings like Ranch, Thousand Island, French, Italian, Russian, Balsamic vinagrette, etc.
You can throw in cooked rice, cooked sliced potatoes, fresh or cooked veggies, cheeses, sliced apples, pears, just about anything that strikes your fancy!
I've been toying with having some friends over for a "Wrap Party" - with some cooked shredded chicken, cooked rice, sliced onion and cucumber and other veggies, asian cole slaw, sliced apples and pears, and a choice of asian sauces. They can mix and match the fillings to suit! :D

I made th eAsian one today, and as Lunchbox says "AWESOME"
I had to use soy sauce though as i had no TS, and it was just as yummy, have to try the TS next time

i made these the other night and they are DELICIOUS!!!! dh loved them (shocker!) i actually used extra jalapenos because he likes spicy food so they were a tad to hot for me, lol.
now i'm wanting wraps!!! i found HUGE flour tortillas that only have 120 calories/0.5 gms fat and only 3 WW points, so i'm in "wrap" mode now!!!
